Swai catfishes can be found in the rivers of Southeast Asia, particularly in Vietnam. While most of the freshwater catfish in North America can be found in lakes and ponds, the Swai fish can be found in the river, and is quite good once cooked.
The most important thing to remember is that whenever you buy a catfish, buy it in fillets or thick nuggets. There are many ways catfish can be cooked: here is one of them. We have here one of the healthy fish recipes that will help you in cooking a Swai fish.
1. Broil catfish. While broiling, melt 1 tbsp. of butter in a small sauce pan. Add up to 1/3 cup of lemon juice, 1 tsp. of hot sauce, ¼ tsp. of salt and 2 garlic cloves. Turn off when it starts to boil. Add up to 3 more tbsp of butter and allow to melt. Wash and dry your catfish with paper towels. After drying, place the catfish in a broiler tray lined with tin foil and turn the broiler high. Put some butter sauce on the fish and place it under the broiler for 3 minutes. After that, add the rest of the sauce and broil the Swai another 2 minutes, or until the fish is cooked.
2. Deep-fry the catfish. Preheat oil in the deep fryer. Mix 1 cup of flour, 1 cup of cornmeal, and 1 tbsp. of baking powder in a large bowl. Add 1 tbsp. salt and ½ tsp. cayenne pepper. Mix. Cut the catfish into chunks. Sprinkle with salt and pepper. Dip each piece in the batter. Deep-fry until golden brown – about 4-5 minutes.
3. Blacken the catfish by combining 1 tsp. of white pepper, 1 tsp. of lemon pepper, and 1 tsp. of creole seasoning. Sprinkle over fillets together with the lemon juice. Place the Swai fish in a wire basket and grill it for 7-10 minutes.
4. Bake the Swai. Sprinkle with salt and pepper. Put the fish in a casserole dish and melt 4 oz. of butter. Add up to 4 oz. of white wine, 1 tbsp. of lemon juice, and 1 tsp. of minced garlic. Top it off with 1 tsp. of chopped parsley and simmer the fish for 2 minutes. Sprinkle with paprika. Bake the fish in a 375 F oven for 10 to 12 minutes.
